Ingredients:

– One tablespoon of coconut oil
– Three cloves of garlic
– Two medium yellow onion, diced
– Two medium carrots, diced
– One large head cauliflower, chopped into small florets
– Two teaspoons ground cumin
– Two teaspoons curry powder
– Two teaspoons turmeric
– One teaspoons ground cardamom
– Dash of red pepper flakes
– Five cups vegetable broth
– One cup full-fat coconut milk
– One tablespoon apple cider vinegar

Directions
–  Melt coconut oil in large soup pot
– Add garlic and onion. Once onion becomes translucent, add – one cup packed spinach
– Add in cumin, turmeric, curry powder, cardamom and red pepper flakes. Wait for ten minutes or until the spices become aromatic.
– Add in vegetable broth, coconut milk and apple cider vinegar.
– Stir until combined. Pepper, salt and season to taste.
– You can use liquid coconut oil, coconut flakes, or cilantro to decorate. 

SMOKY BROCCOLI SOUP

Ingredients:

– Two tablespoons olive oil
– Four cups chopped onions – two large sweet onions
– One tablespoon pressed garlic – six small garlic cloves
– Two teaspoons sea salt
– Two tablespoon plus cup water ¾
– Teaspoons cayenne ½ + ¼
– One teaspoons smoked paprika
– Teaspoons ground pepper ½ 
– One cup chopped broccoli
– Three cups cauliflower
– Two tablespoons ghee
– One tablespoon apple cider vinegar
– Five cups spinach – five large handfuls of spinach
– One can organic coconut milk
– One tablespoon micro grated lemon – zest of one full lemon
– Two tablespoons fresh lemon juice

Directions

Fry onions for four minutes on medium heat, until translucent.

About five minutes.

Add smoked paprika, cayenne, garlic, pepper, one teaspoon of sea salt and two tablespoons water.

Stir well, and continue heating for another two-three minutes.

Add ghee, apple cider vinegar, cauliflower, and chopped broccoli and stir all well to be all good coated. 

Leave for at least two minutes so that the flavors mix.

Add ¾ cup of water, another teaspoon of sea salt, and lemon zest. Continue cooking over low to medium heat for another six to seven minutes.
Once cauliflower is cooked through, reduce heat add coconut milk, lemon juice, and stir well.

Heat the entire mixture enough to warm the coconut milk.

Turn off heat and use a handheld blender or high-speed blender (much smoother with high-speed blender).

Add a little more water if you want it thinner!

Taste and adjust.

GREEN GAZPACHO WITH AVOCADO CREAM

Ingredients:

– One peeled english cucumber
– Three tomatoes – large ones
– Two cups spinach chopped
– Two cups chopped red pepper (approximately one or one ½ red pepper)
– Cup chopped parsley ½ 
– One teaspoon pressed garlic (approximately two cloves)
– Cup minced red onion ⅛ 
– Cup olive oil ⅓
– Two teaspoons chopped jalapeno
– One, one and a half tablespoons apple vinegar
– Teaspoon sea salt half of one spoontable
– Teaspoon pepper ¼

Avocado Cream

– One cup of avocado (approximately one avocado)
– One juice of half of a lime
– Teaspoon presses garlic ½ (one clove)
– Cup olive oil ⅛
– One tablespoon of nutritional yeast
– Salt

Directions

Peel cucumber with a vegetable peeler and cut in half lengthwise. If the cucumber has quite a few large seeds, scrape this fleshy part out with a spoon.
Cut tomatoes into quarters and remove the seeds.
Add cucumber, onion, garlic, tomato, parsley, spinach, red pepper, salt. Blend around two minutes until smooth.
Add olive oil and apple cider vinegar and blend for another 30 seconds.
Add salt and pepper to taste.
Chill in the fridge.

Now, for thirty seconds put this in a food processor: garlic, avocado, lime, nutritional yeast, and a pinch of salt. 
Add oil and process for another 30 seconds until a smooth sour cream-like consistency is achieved.
Put chilled gazpacho into a bowl and top with a dollop of avocado cream, a sprinkle of parsley, and an artistic drizzle of olive oil.

TOMATO & RED PEPPER GAZPACHO

Ingredients:

– 970 grams ripe, chopped tomatoes
– One large cucumber, peeled and chopped
– Two large red pepper, deseeded and chopped
– One small bulb of fennel, chopped
– Two garlic cloves, minced
– One tablespoon fresh squeezed lemon juice
– Four tablespoons of olive oil
– Salt and pepper

Directions

Add all these into a higher speed blender and blend until smooth, tomato, peppers, cucumber, garlic, and fennel.
Add in lemon juice and olive oil.
Season with salt and pepper, to taste.
Cool in the fridge for at least 1 hour.
Garnish with finely chopped cucumber and tomato and the greens from the fennel bulb.

NUT MILK

Makes about 1 liter

Ingredients:

– One heaping cup raw almonds or brazil nuts, soaked
– Four cups filtered water
– One teaspoon vanilla extract or whole vanilla bean, chopped ¼
– Teaspoon cinnamon
– Teaspoon fine sea salt ¼
– Thumb or more of ginger or turmeric, or both (this is optional)

Directions:

Place nuts in a bowl and cover with a couple inches of water. Soak the nuts overnight (about 8 to 10 hours).
Put drained almonds into a blender together with vanilla, sea salt, cinnamon, filtered water, and ginger. 
Blend on the highest speed for 1 minute.
Place a nut milk bag over a large bowl and slowly pour the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk until the pulp is dry.
Pour into a large glass jar and secure lid. Store in the fridge for up to 3 to 4 days.

Ingredients:
– Cup hemp seeds ¼
– One cup filtered water
